January in Amsterdam is grey, cold and quiet, and the light festival is still running for the visitors who come in the weeks after the holidays. Sophia likes this stretch of the calendar for its calm: the Jordaan canals are lit, the streets are empty by ten and a booking can be arranged the same evening. She speaks Greek and English and has a soft, steady manner suited to a guest who arrived tired.
